What is Balti Cooking?
Balti cookery’s origin, back in Northern Pakistan, has a clear Chinese influence. The Balti cooking pan is closely related to the wok, the indigenous peoples of Baltistan have traditionally lived a nomadic existence, cooking meat from their flocks or hunted game. The cooking pot, or karahi, is placed on a pile of glowing embers and any available meat or vegetables are cooked in the one dish and seasoned with dried spices. The resultant casserole is tender and fragrant, full of aromatic ingredients enhanced by a long, slow cooking.
